- 1 large red apple (peel on, cut into matchsticks)
- 1 large pear (peel on, cut into matchsticks)
- 1 celery stalk (thinly sliced)
- 4 oz. Havarti cheese (diced)
- 3 Tbsp. olive oil
- 3 Tbsp. frozen apple juice concentrate (thawed)
- 3 Tbsp. pecan pieces
In a mixing bowl, combine olive oil and apple juice. Whisk well. Set aside.
In separate bowl, combine apples, pears, celery, and cheese. Toss well.
Drizzle dressing mixture over fruit; toss to coat.
Sprinkle with pecans.
