- 1 lb. pinto beans
- 1/2 lb. bacon
- 1 cup green bell pepper (chopped)
- 1 cup onion (chopped)
- 2 cans diced tomatoes
- 1 small pkg. jerky beef bites
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1/4 cup honey
- 2 Tbsp. Worcestershire sauce
- 1 1/2 cups unsweetened applesauce
- 1 tsp. ground ginger
- 1 tsp. dry mustard
Soak beans overnight, rinse and drain.
Add beans to a large stock pot and add enough water to cover beans. Bring to a boil and simmer for 45 minutes.
Drain beans, reserving cooking liquid.
Preheat over to 350*.
In a large pot, cook bacon until crisp, add onion and peppers; cook until tender.
Add beans and 2 cups of the reserved liquid, tomatoes, beef jerky, ketchup, sugar, molasses, honey, Worcestershire sauce and dry mustard.
Stir and bring to a boil. Lower heat and simmer 1 hour.
Stir in applesauce and ginger; pour into a greased baking dish and bake for 1 hour.
